This is so interesting. I have to send it to a friend of mine who's obsessed with speakeasys and pricey cocktails. 😋

The part that really stuck with me was how the transition from rum to grain spirits was a critical step towards the cocktail.

Makes sense to me--rum's the only liquor I don't find to be awful, so of course, you'd have to start mixing in other ingredients in once you're dealing with yucky grain-based alcohol.
